The Company and the Role:
Interim Contract for a successful and passionate Senior Sous Chef covering the Ski Season from November 2019 - April 2020, with award-winning Executive Chef in a 4-star Hotel and Spa in Courchevel, France.
With the Ski Season fast approaching this is a fantastic opportunity to form part of luxury lifestyle hotel brand, who have created something a little bit different at each of their venues, so their guests feel at home wherever they are.
This is a superbly exciting mountain retreat accredited with a French 4-Star rating with 42 luxurious rooms overlooking the piste or mountain.
Kitchen team creates some of the most beautiful dishes and the food is an Italian style fusion with French mountain food, as well as preparing classic French, pasta dishes, using plenty of locally sourced produce and a terrific range of meats grilled on an open range.
Additional restaurant on site with a wood fired oven for outdoor lunches, snacks and drinks available throughout the day and into Après Ski time.
As part of a larger award-winning and growing brand there are multiple superb and permanent opportunities for all year round careers, plus development and progression, perhaps into one of the new or existing 5-star Hotels and Spa`s on the British South Coast, or alternatively you could work on one of their chartered luxury cruises setting off around the world.

Key Features of the Role:
Senior Sous Chef opportunity is specifically requires you to be a Brigade Leader first and foremost, ensuring every Chef is on their game and that no one messes around, offering balanced leadership, with your focus on controlling the pass.
Working with and supporting a fantastic and creative Head Chef, complementing his management style, as well as potentially working alongside the famous and award-winning Executive Chef.
Covering for breakfast, lunch and dinner services as and when required on a rota-based system, but also able to be flexible due to the challenges of winter seasonal work.
Able to cover all kitchen stations and cook French and Italian food using only fresh and local ingredients, as well as being involved in food prep.
Ensuring the brigade are motivated, trained and supported at all times and you need to understand the challenges of leading a large team. Liaising closely with the hotel management team to ensure full customer satisfaction.
Must travel to France and start work by the end of November and work the Ski Season finishing at the end of April 2020, no holiday to be taken during this period, only at the end of season.

Knowledge and Skills Required:
Senior Sous Chef experience within a hotel kitchen restaurant is a must, supported by 4-star or 5-star cooking, food prep, pass management and team leading.
Knowledge of French classics plus Italian styles, especially fresh pasta all cooked from scratch.
Exceptional proven ability of kitchen management leading a large brigade of 20 and running the kitchen in the absence of the Head Chef.
As a Sous or Senior Sous Chef who has comfortably dealt with large volumes of covers 200+ lunch and 100+ dinner.
Outstanding communication and leadership skills, clear, precise open and honest but respectful at all times, as well as having an emotionally robust character who can lead by example.
Up to date with culinary trends and optimized kitchen processes, able to motivate, train and develop others in your team.
Credentials in health and safety training are required.
Conversational French is an advantage although not essential.
You must have full right to work in the EU, work Visa`s will not be supported.

What`s on Offer?
Senior Sous Chef opportunity will offer a basic salary range of £30K to £34K as a pro-rata basic annual salary paid in GBP into a UK bank account, on a French FTC Contract, taxes will be paid in France. Share in (non-guaranteed) cash tips.
Employed directly by the Company which allows for all additional employee benefits and any Brexit needs for a Visa will be covered by the Company. However, the Company are unable to support Visa applications.
Travel to resort and free accommodation is available and meals on duty will be supplied.
Full training will be offered as well as the companies induction process.
An opportunity for continued employment in one of the other brand UK hotels after season.
Career development and progression over the coming years at either of the 2 new venues or in any of the established venues.
Opportunity to work with famous and other award-winning Executive and Head Chefs within the group and complete trail shift in restaurant venues in London or Hampshire.
