Key Features of the Role:

  • You will work 3.5 days a week based on full time hours, with a work schedule planned 3 months in advance, with 1 long weekend per month, allowing you to plan your family time / downtime in advance.
  • The Commis Chef is the start of your catering journey and you will be expected to work with fresh ingredients, you will need resilience to handle and deliver the high standards of service
  • The brigade structure requires you to take food orders, cook them to the trained standard required at the direction of a Chef de Partie or Head Chef or Sous Chef.
  • You will also be expected to help, support, and assist other Chefs and Commis Chefs to make sure the kitchen runs efficiently and effectively, as any team should.
  • The kitchen is a very busy place and serves breakfast, lunch, dinner to almost 64 hotel guests per day, as well as additional alfresco dining visitors, private functions, and event guests.
  • Menu items can change every day, so you have to be flexible and prepared for changes, fresh produce and locally grown / sourced items are not limitless. However, you will get opportunities to recommend and get involved with new menu item creation.

Knowledge and Skills Required:

You must be an accomplished Commis Chef with a good employment record or alternatively an ambitious Kitchen Porter looking for the next step up in your career.

You should have basic catering and kitchen experience supported by industry qualifications and or training or be studying for your industry qualifications.

Experience cooking fresh food menu items from scratch is preferred as there is no microwave used to cook all the food in this kitchen.

Reliable transport is a must (car or motorbike) to get to the venue, as there are no public transport links and no live-in options available.

Experience of working in a busy kitchen / restaurant environment where orders can come thick and fast, having the calmness to work through multiple orders as directed.

You will also need to be someone who can identify if they are overwhelmed and need support, as well as offering this to others when needed, as success is a team effort.

What is on Offer?

Basic starting salary will be the National Minimum Rate according to your age with the opportunity to quickly move up the brigade structure to a salaried position.

Service charge (Tronc) usually ranging between £200 - £300pm (That is up to £3,600pa extra).

3.5 working days per week, 1 long weekend per month on a rota 3 months in advance.

Personal guidance, tuition, and training from well-known celebrity Chefs onsite and as part of the venue`s masterclasses.

Holiday entitlement 20 days plus all bank and public holidays, rising 1 day each year for 5yrs.
