The Company`s 5-star Hotels all having a touch of superior elegance inside and outside, fabulous grounds, and are more like a restaurant with rooms and kitchen garden. The concept was created in 2011 and has been recognised with many accolades and industry awards.

The Company is expanding with new venue openings in the pipeline. Their ethos is to give their staff a great place to work that is fun, professional and just a little bit different, with bags of opportunity for career progression and potential international work experience.

They pride themselves in their ability to bring the best out of their FOH Sommelier Wine Team, with constant learning provided, and freedom to experiment with wine and drink pairings.

Complementing the fresh ingredients used in all of the restaurant`s menu items from their own gardens and greenhouses. Creating new guest experiences with passion and delivering on expectations. It can be challenging at times but very rewarding.

The Company is currently looking for a dedicated, organised Head Sommelier (aka a Rock `n` Roll wine Nerd!) to lead their FOH Wine Team at one of the most exciting award-winning Hotel restaurants in the New Forest, Hampshire close to the South Coast. The position is permanent and full time. A live-in option may be available.

Key Features of the Role:

  • Be responsible for the Wine Cellar and have the freedom to select and build the wine list
  • Create new relationships with suppliers and have the autonomy to do something a little bit different. 
  • Using your hospitality wine and drinks-based knowledge to create good pairings, as well as being able to retain knowledge of wine lists.
  • Keeping a professional attitude in a busy restaurant and hotel environment and being aware of all bookings and any guest special requirements.
  • Engage with guests in a non-stuffy, more informal environment.
  • Ensuring all areas and equipment are properly stocked, maintained, cleaned and set up ready for service.
  • Be involved in working with other Head Sommeliers in the Group on creative group training, wine trips and have the opportunity to suggest new ideas to the group.

Knowledge and Skills Required:

As Head Sommelier you must have a can do attitude; and be truly reflective of the company`s brand.

You will be leading a wine team in providing the high level of service they are known for.

Via a proactive and motivated approach, you will need to have strong product knowledge to pass onto the other members of your team.

You must have completed a recognised study in wine and spirits and in turn the Company will provide you with any other qualifications that might be required to enhance your own personal learning and development.

Your knowledge of wine must drive your creative flair of developing the wine list and cellar.

You will need to be reflective of the Company`s attitude and ethos in all that you do, working collaboratively with the management team to provide guests with a truly unique experience.

You will need to be flexible with working hours to include evenings/weekends and not afraid to be hands on in service.

Experience in a similar role is essential, plus recognised qualifications in wine and spirits.


What`s on Offer?

An attractive basic salary depending upon your knowledge, experience, wine qualifications and skill set, plus Tronc worth around £2500 per annum.

Working 5 days out of 7, lunch and dinner typically working 45 hours per week in a relaxed and informal setting and wearing jeans and casual wear to work.

Holiday entitlement is 20 days plus all bank and public holidays, rising by 1 day each year for 5 years.
