The Company is currently looking for a dedicated, organised Assistant Head Sommelier to join their FOH Wine Team at one of the most exciting award-winning Hotel restaurants in Dorset close to the South Coast. The position is permanent and full time. No live-in option.
Key Features of the Role:
The Assistant Head Sommelier provides high quality wine pairings to hotel guests.
Using your hospitality wine and drinks-based knowledge to create good pairings, as well as being able to retain knowledge of wine lists.
Keeping a professional attitude in a busy restaurant and hotel environment and being aware of all bookings and any guest special requirements.
Assistant Head Sommelier engages with guests in a non-stuffy, more informal environment.
Ensuring all areas and equipment are properly stocked, maintained, cleaned and set up ready for service.
Career development in a creative atmosphere is the Company`s goal.
Knowledge and Skills Required:
To be successful in this role you will need to be an accomplished Assistant Head Sommelier or Wine Waiter.
You should have a passion for wines and spirits, and have a friendly and warm persona, a great team player with good organisational skills, and the ability to thrive in a very busy hotel and restaurant, always aiming for high standards.
The Hotel is willing to employ someone who fits their brand but may have minimal knowledge as an Assistant Head Sommelier or Wine Waiter.
They are willing to train and put you on Sommelier`s WSET courses 1, 2 and 3 if you are willing to work hard and progress within the group.
Previous experience as an Assistant Head Sommelier or Wine Waiter in a Fine Dining restaurant would be preferable but not essential this Hotel does not do wine snobbery or stuffiness!
You will need to be knowledgeable of menus, recipes and beverage offerings, coming from a hotel or restaurant hospitality industry sector background.

What`s on Offer?
A basic salary of £18K - £22K per annum depending upon your knowledge, experience, wine qualifications and skill set, plus Tronc worth around £2500 per annum.
Career progression within the Hotel and group, due to new venue openings this year and next, as well as the opportunity to work abroad, and in unique venue locations.
Working 5 days out of 7, lunch and dinner typically working 45 hours per week.
Holiday entitlement is 20 days plus all bank and public holidays, rising by 1 day each year for 5 years.
