The Company and the Role:
The Company is setting a new benchmark by combining local produce and a table service restaurant.
They are currently seeking a permanent Deputy Restaurant Manager for their senior garden centre restaurant team located in Berkshire, someone with a passion for good food that is ready to continue developing their career.
The restaurant is table service with a full menu served from breakfast till lunch, with cream teas proving to be very popular throughout the day. All food is cooked fresh to order and the emphasis being on good quirky presentation using seasonal ingredients.
All meals are prepared daily in their kitchens using fresh meat, fish and seasonal produce. These are sourced from their own farm shop on site, but also use where possible, local producers and suppliers.
Supporting the Restaurant Manager in all areas of the restaurant, taking responsibility for its effective running during their absence, in a trusted hands-on capacity, showing organisation, prioritisation skills, as well as attention to detail, ensuring quality standards are met.
Key Features of the Role:
Directly responsible for the waiting and bar operations, staffing levels, stock control, delivery quality and efficiency.
Deputy Restaurant Manager requires hands-on leadership, leading by example, always putting the customer first.
Attend daily and weekly store management meetings, offer wider store and company performance feedback to the team and line managers, monitoring for improvement and performance.
Ensuring all FOH daily shifts plans are completed and prepared 4 weeks in advance, correct staffing levels (in line with DART charts and store budgets), audits, training development, ensuring customer service and brand standards adhered to.
Working with supplier partners in delivering excellent standards of operation, and to minimise disruption through POD system and PDQ training.
Working in close unison with departments across the restaurant such as Bar, Waitering and Bakery.
Alert to theft from external and internal sources, and how to prevent it.
Carry out a range of ancillary administration and financial contribution reports.
Knowledge and Skills:
To be successful in this role you will need to be an accomplished Deputy Restaurant Manager or have been an Assistant Manager of a table service food outlet or restaurant.
Good overall knowledge and ability to complete report writing using Microsoft Office or other relevant software, carrying out filing and compiling meeting documents.
Set staffing Daily Shift Plans 4 weeks in advance and ensure that these are maintained and worked, within budget available, managing from 10-20 staff.
Monitor, train, develop and communicate with all members of the restaurant FOH team, leading by example and being hands-on are key requirements in this role for you to succeed as Deputy Restaurant Manager.
Experience managing customers / guest expectations, excellent customer service, complaint handling, within a restaurant or food service venue.
Previous feedback monitoring experience, disciplinary procedures, hiring and firing.
Previously set achievable targets and goals for your team, helping them to attain and overachieve.
Experienced in health and safety training as a Deputy Restaurant Manager, enforcement and engagement throughout the team.
Previously a Deputy, Assistant or Restaurant Manager will all have viable transferable skills, but they must come from a catering & hospitality or foodservices venue.
